Skinny Witloof Gratin - Endives with smoked salmon and cream
The best known endive dish is Witloof with Ham and Cheese. It is very nice, but not good for the hips, because of the heavy Mornay sauce. The following is a slimmer version of the dish, suitable for low carb dieters.
Ratatouille
Ratatouille (ra-ta-too-ee) is an overlooked classic. Classic because it is easy to prepare, is almost impossible to get wrong and is highly adaptable. And when you think what goes into it (aubergines, tomato, peppers, onions, garlic, courgettes) then you have a vegetable feast. If you over did the meat yesterday or went out on a pasta bash, here is a way home.
Melitzana salata
Melitzana salata is a delicious refreshing dip, enjoyed with breads like pita and often making up one part of a mezze or mixed starter meal.
It can be eaten alongside hummus, stuffed vine leaves and other traditional Greek starters.

Watercress Mash
This recipe comes from the Watercress Alliance and is an interesting twist on mashed potato. In fact it seems to be a supercharged health meal though you may wish to adapt it slightly by reducing the olive oil and butter content.
