Stir-fried adzuki beans with green pepper from Hunnan


This is from Madhur Jaffrey's World Vegetarian. Comfort food! Aduki beans contain 22g protein per 100g, are a good source of magnesium and are much favoured in China for their many healing properties.
Stir-fried adzuki beans with green pepper from Hunnan

Serves 3-4

You need:

190 g adzuki beans, picked over and soaked
250 g shiitake mushrooms, sliced thinly
2 tbsp vegetable oil
3 spring onions, cut into very, very thin rounds
3 cloves garlic, peeled and finely chopped
1 large green pepper cut into 3 mm dice
< 1 fresh green chilli finely chopped


2 tbsp tamari
2 tsp toasted sesame oil

Cook the beans about 1-1.5 hours until tender. Pour oil into wok or large frying pan set over high heat.

When hot, put in the spring onions.
Stir rapidly for 30 seconds.
Now add garlic, green pepper, green chilli and mushrooms.
Stir rapidly and fry for 1 minute.
Add cooked beans, then soy sauce.
Simmer gently 2 mins.
Add sesame oil, stir to mix, serve.
