Potatoes with Dates
Or the old fashioned kind where we get to know each other and things fall into place? Or it's a friend of a sister or brother?
I mean the kind of dates people eat out east.
I was in the supermarket today and they had a deep discount on Irish Angus beef - no doubt soon the Irish won't be able to use the term angus but for now it's OK.
A share of the beef market in Ireland goes to organic farmers who can't sell through organic channels - you can often get exceptionally good beef and even organic beef for normal prices, though who knows?
The kids were sniffling in the Autumn damp so I decided to give them meat. But I thought twice - what if they could also eat sun-dried tomatoes, dates, lemon, peppers.... I mean healthy, healthy food.
To start with: Chips shallow fried in coconunt oil.
You need:
* 6 medium sized potatoes
* 2 tbsp of coconut oil
Peel six medium sized potatoes and cut into "chip" or "fry" sized bits. Par boil for 5 - 7 minutes and drain. Cover with cold water to prevent further cooking.
Over a high heat put a frying pan with 2 tbsp coconut oil. Drain the chips/fries and pat dry. When the oil is very hot put in the chips and cook until golden brown - turning occasionally.
For the burgers - get the best quality you can and cook them in a separate fry pan.
Before, during or after make the sauce.
For a quick tomato and date ketchup you need.
* 4 tomatoes
* 9 dates
* Half a lemon
* Half a red pepper
* 6 pecan nuts
* 1 tbsp date syrup
* 6 dundried tomatoes
This is a basic blend dish but first put the tomatoes through a muli so you strip off the skin and strip out the seeds and leave yourself with pure juice. Dice the half red pepper (strip out any inside pith) and pit and dice the dates.
Put the pecans, lemon juice, sun-dried tomatoes, diced red pepper, diced dates and date syrup in with the tomato juice and blend - it really needs an electrical blender sadly though I've tried with a culinaire and had reasonable results - for adults. Kids want it smooth.
