Ginger-roasted sweet potatoes


This simple, easy-to-prepare and very tasty recipe comes from Dennis Cotter's Café Paradiso Cookbook.  See separate posting on sweet potatoes and their nutritional properties.
You Need: +/-500g sweet potatoes, peeled and cut into rounds 15 mm thick.
2 tbsp melted butter (or olive oil)
1-2 tbsp grated ginger
1/4 tsp sea salt

Preheat oven to 180°C-200°C.   Toss the potatoes with other ingredients then roast them until soft and browned.  They may need to be turned once or twice during cooking (30-40 minutes).
