In London they have restaurants such as the Masala Zone which serve authentic ayurvedic food. Its objective is perfect balance and having eaten there I can attest to how easy the food is to digest. Indian food comes to us via restaurants geared around western tastes (often unpalatable if you care about food) and a limited number of recipe books (whose authenticity is hard to judge).
